1/2 onion chopped
2 poblanos
4 oz pork belly/Thick cut bacon diced
8 cloves garlic
3 jalapenos whole
3 lbs dry pinto beans
Salt (to taste)
Chili powder (to taste)
Pepper (to taste)
*Sometimes I out a sprinkle or 2 of cumin
3 Bayleaves
2 qt homemade chicken stock
6 qt water
4 roasted chopped tomatoes

Just put everything together, boil until the beans are done, most of your veggies will dissolve into the sauce after about 4 hours. Cook for 6 hours or so.
