Mexican

4 Chicken breasts, filleted
1 Ounces Tequila
 Ounces Triple sec
2 Ounces Worcestershire sauce
2 Teaspoons Liquid smoke
2 Teaspoons Onions, minced
1 Tablespoon Lemon or lime juice
1 Tablespoon Chili powder
1 Tablespoon Cilantro
1 Teaspoon Cumin
1 Teaspoon Garlic, minced
2 Teaspoons Garlic salt
2 Onions, sliced
1 Bell pepper, sliced
1 Teaspoon Olive oil, optional
1 Pinch Garlic salt, optional
1 Tortilla per quesadilla
1 Ounce Mexican blend cheese (or desired amount)

Add 1 1/2 oz of tequila and 1/2 oz of triple sec to a close able container.

Add 1 1/2 oz of Worcestershire sauce to the mixture.

Add 2 tsp of minced onions to the mixture.

Add 1 tbsp of lemon or lime juice to the mixture.

Add 1 tbsp of chili powder to the mixture. Since I like it spicy, I added 1 tsp of Cayenne pepper here. :)

Add 1 tbsp of cilantro to the mixture.

Add 1 tsp of cumin to the mixture.

Add 1 tsp of minced garlic to the mixture.

Add 2 tsp of garlic salt to the mix. (You can also do 1 tsp of garlic salt and 1 tsp of garlic powder)

Once you are finished, mix all the ingredients together. Separate a small portion (~1 oz) into another bowl for the onions later.
Add your filleted chicken to the mixture.

Now stir the chicken thoroughly in the mixture. I always use a container to shake it up. Ziplock baggies also work.

Turn your grill burners on high.

Now slice 2 onions and 1 bell pepper.

Add the set aside mixture to the onions and bell peppers. You can add an optional 1 tsp of olive oil.

Put the onion mixture in a BBQ safe pan. I sprinkled a pinch of garlic salt on top. This pan is specifically for grilling, but you could use a pan you would normally use in the oven.

Stir the mixture well.

Now put the pot on the grill. Turn the heat to medium.

After 5 minutes of the veggies cooking, it's time to add the chicken to the grill. Turn any area the chicken is on to high heat.

After 4 mins, flip the chicken and cover the grill. You can tell when it's ready because the edges are white. After 4 mins, the chicken is ready to be removed.

Now it's time to get your quesadilla shells ready.

Spread the cheese evenly across the quesadilla. The chicken should be finished now.

Take the chicken and onion mixture off the grill and lower the heat to low on the grill.

Clean the grill off and put the quesadillas on the grill. You can either close the grill or leave it open. Cook the tortillas for 3 mins or until cheese is melted.

Take the chicken inside and cut it into slices. Yum. It's starting to look tasty.

Take the tortillas off the grill after 3 mins or when the cheese is melted.

Add the slides chicken on one side or cover the entire tortilla

Add the onion mixture on top. (either half or all)

Fold the tortilla in half, if using the 1/2 tortilla method, otherwise top with the other tortilla

Cut as desired and serve with your favorite sides. I added guacamole and jalapeos. Yum! Now enjoy your hard work. :)
