Crust
2 cups graham cracker crumbs
1/2 cup sugar
6 Tbsp butter
Filling
3 pkgs (8 oz) cream cheese cubed
1 1/4 cup sugar
6 eggs separated
1 pint sour cream
1/2 cup flour sifted
2 tsp vanilla
grated zest of 1 lemon
Juice of 1 lemon
Conf sugar for garnish

Beat the cheese till soft and creamy. Add the sugar and mix thoroughly. Blend in the egg yolks one at a time until well blended. Add the sour cream, flour, vanilla, zest and juice, mix well. Bet the egg whites till stiff not dry. Stir one third of the egg whites into the cheese mixture and then add the remainder gently.
Mix 1 1/2 cups of the bread crumbs sugar and butter and line the bottom of a 10 inch springform pan. Pour cheese mixture onto crust and bake in preheated 350 oven for 1 hour. Turn off heat and all allow cheesecake to remain in oven for another hour. Remove to rack and cool to room temperature. Sprinkle with remaining bread crumbs and chill overnight. Add conf sugar if desired and serve.
