2 ripe bananas
3/4 cup sugar
2 Tbsp Shortening
1 egg
3/4 cup milk
3 Cups unbleached flour
4 tsp baking powder
1 tsp salt
3/4 cup chopped nuts/raisins

In a bowl mash bananas. Add sugar, shortening and egg, mix well with spoon. Gradually stir in milk. In another bowl pour flour, salt and baking powder. Stir till mixed. Add dry ingredients to banana mixture and stir till blended. Add nuts and raisins. Grease loaf pan with extra shortening. Pour batter into pans spreading it higher in the corners. Let the pan stand 20 minutes. Bake loaf for 1 hour 20 minutes (325 we think) and let cool. When cool take out of pan and cool completely. Wrap in foil or plastic.
