4 medium zucchini, sliced (3-4 cups)
2 cups small broccoli flowerets
1/3 cup pine nuts
1/4 cup olive oil
1 Tbsp minced garlic
4 Large tomatoes skinned and chopped (4 cups)
1 cups snow peas cut in 1/2 diagonally
1/4 tsp salt
1/4 tsp ground pepper
8-10 oz fettucine cooked al dente and drained
4 Tbsp butter
1/2 cup heavy cream
1 cup grated parmesan
1/4 cup fresh basil or 1 tsp dried

Blanch zucchine in boiling water for 1 minute. Blanch Broccoli for 3-4 minutes. On cooke sheet toast pine nutes about 2-3 minutes under broiler until light brown. In large skillet heat olive oil, add garlic, tomatoes, zucchine, broccoli, snow peas, salt and pepper. Saute briefly about 2-3 minutes. Add fettucine to skillet along with butter, cream, parmesan, basil and pine nuts. Toss gently and serve.
