1 C All purpose flour
1 C cornmeal
2 tsp baking powder
1/4 tsp baking soda
1 tsp salt
1/2 C light brown sugar
1 C buttermilk
1/2 C oil (olive oil was too much, try canola or avacado or grapeseed oil)
1 large egg
1 yolk
1. Preheat over to 375 degrees
Grease an 8x8 pan with nonstick cooking spray
2. Combine the dry ingredients in a large bowl. Whisk to combine.
3. In small bowl whisk together the buttermilk, oil, egg and yolk
4. Pour the liquid ingredients into the dry and gently combine the two
5. Transfer the batter to the prepared pan and bake for 25 minutes, rotating the pan after 12 minutes.
The bread is ready when a tester comes out clean
We made it with the olive oil and it was too intense for my taste, but the bread was moist. Holding off on a rating until we make it with a milder oil.
