4 slices thick cut bacon, cooked and chopped
3 ears of corn grilled and kernels removed from the cob
1/4 cup cherry tomatoes halved
1/2 cup black beans, drained and rinsed
4 scallions thinly sliced
4 Tbsp chopped cilantro
juice of 1/2 lemon
2 Tbsp olive oil
salt/smoked salt to taste (smoke salt for 1-1 1/2 hour with wood of your choice cherry/pecan/mesquite)
black pepper to taste
In a bowl combine corn kernels, cherry tomatoes, black beans, cilantro, scallions, chopped bacon, lemon juice, olive oil and season with salt and pepper. Toss to combine.
