give the entire Tri Tip a rub with oil and a good coat of the rub
Smoke at 230 till temp is 10 degrees less than doneness you want (Rare: 120°F. Medium-Rare: 130°F. Medium: 140°F. Medium-Well: 150°F)
When close, fire up the grill to hot 400 or so.
Move the Tri Tip from the smoker to the grill and reverse sear, when temp is 5 degress lower than desired flip and remove when the temp is attained. |
