In a large pot, boil the red potatoes, then drain and let cool. Once cooled, cut them into 1/2 inch cubes. Transfer to a large mixing bowl.
Cook the pound of bacon, set aside to drain and cool, then crumble and add to the bowl with the potatoes.
Cut both of the blocks of cheese into 1/2 inch cubes, and add to the mixing bowl with the potatoes and bacon.
Add the remaining ingredients to the bowl and mix to combine. Transfer to greased 9×13 baking dish.
Preheat the smoker to 325 degrees F. Place the baking dish onto the preheated grill, making sure it’s over indirect heat, and bake for 60 minutes
Remove and serve hot. |
