The first four are proportional, figure 2 pieces bacon per lb of potatoes, and eyeball the onion peppers to your liking. For the check stock likewise 8 and 16 for 3-5 lb, you can half for 1 lb

Smoke bacon in a skillet at 400 until done. Remove bacon, cook diced onion and mini sweet peppers in bacon grease, then add baby potatoes. Pour in chicken stock and beer. Lower smoker to 350. Smoke for about an hour until some liquid has evaporated. At this point you can leave the potatoes whole or smash thm. Sprinkle shredded cheese and bacon pieces over the top. It’s SO good!

Should take about 90 minutes total.
