Set smoker to smoke only (you are only imparting flavor) using a mild wood (apple, cherry, pecan) Remove brisket from package (optional rinse to remove saltiness), let air dry 2-3 hours. Place on tray (optional sprinkle with some additional pickling spice) and smoke for 3-4 hours (I like 4 but its up to your taste). In a baking pan/dish add a can of Guinness, a can of water and the flavor packet. Place a tray (to keep the corned beef above the liquid), the corned beef, cover (if you don't have a lid tent with foil) and cook in the oven/grill at 350 until the corned beef hits 204 in the middle. Remove, let set 20-30 minutes. If saving for later let cool and store the meat (whole) in the liquid. Slice/cube as you please when ready to use. | |
Good for hash, sandwiches, any use. the meat will be nicely flavored and a perfect texture. Add a little of the liquid for additional flavor. Cooking Idease Hash For hash dice an onion, some peppers and either us frozen or fresh potatoes. Cook the potential lightly browned (400 in the oven works best for fresh, stirring every 10 minutes). In a frying pan, add oil, peppers and onions and cook till softenes. Add the potatoes, corned beef, and some of the braising liquid. Heat through, add a little more liquid is needed, and season with granulated garlic and pepper to taste. Regular corned beef and cabbage After the meat is done and setting Add about 3/4 of the reserved liquid to the stock pot (remaining 1/4 is for the meat). Place steamer basket in stock pot. Add up to 2 cups beer/water to the pot (Liquid should not touch bottom of basket). Place cabbage, potatoes and carrots in basket. Bring to a boil. Cover tightly; reduce heat and steam vegetables 20 to 25 minutes or until fork-tender. Remove fat from brisket, if desired. Carve brisket into thin slices across the grain. Combine butter, salt and pepper in small bowl. Drizzle over vegetables. Serve brisket with vegetables. | |
