Make the pitmaster rub. Reserve 3 teaspoons 1 for the barbecue sauce and 2 for to cooked wings, take remaining rub, add hot sauce and chicken wings and mix by hand until fully incorporated. Allow wings to marinate at room temperature for 1 hour or refrigerated up to 24 hours. Make the Alabama White Sauce while marinating. Preheat a smoker to 230 degrees F 30 minutes before smoking Smoke wings with Applewood, at 230 for 2 hours, finish with a flash fry to crisp the outside. Shake with the reserved dry rub and serve with Alabama white barbecue sauce. | |
