Summer Party, Summer Party Finale

1/4 cup balsamic vinegar
1 TBSP extra virgin olive oil
1lb oz mozzarella in 1/4-1/2 in cubes
1lb 2 1/2 inch pepperoni sliced thin
toothpicks

in a plastic bag combine the vinegar/oil and cheese cubes. Mix well and let set at least 30 minutes or overnight. Let the pepperoni sit at room temperature to become more flexible. Drain the cheese cubes, wrap the cube with a slice of pepperoni, covering as tightly as possible and hold closed with a toothpick. Place in a smoker dish and smoke for 15-30 minutes (till starting to darken and cheese is gooey). Serve immediately.
