�2 Tbsp olive oil
�� cup chopped onion
�2 cloves garlic, minced
�⅓ cup chipotles in adobo sauce, minced
�1⅓ cup ketchup
��-1/2 cup water
�2 Tbsp cider vinegar
�2 Tbsp spicy brown mustard
�2-4 Tbsp brown sugar (depends on how sweet you like it)
�Black pepper
�Salt

1.In a medium sauce pan heat the oil
2.Saute onions until soft and translucent. Add garlic, stir, and cook for 1 minute more.
3.Add the minced chipotles and sauce to the pan.
4.Stir in the ketchup, vinegar, mustard, and brown sugar.
5.Thin with water to desired consistency (I used about � cup) and heat just until bubbles begin to appear.
6.Taste and season with salt & pepper to taste.
7.For smooth sauce, let it cool 5-10 minutes and run it through the blender until smooth.
8.Transfer to a Mason jar or airtight bowl and store in the fridge (will keep for 2 weeks).
