�2 tablespoons of Achiote Seeds
�1 teaspoon of Cumin
�1 teaspoon of whole Allspice
�1/2 teaspoon of Pepper
�1/2 teaspoon of Oregano
�1 teaspoon of Coriander Seeds
�4 Cloves
�1 pinch of Nutmeg
�1 pinch of Salt
�2 Habanero Peppers
�4 Garlic cloves
�1 tablespoon of Lime Juice
�1/2 cup of Orange Juice
�1/2 cup of White Vinegar



�Put in a spice grinder 2 tablespoons of achiote seeds, 1 tablespoon of cumin, 1 teaspoon of whole allspice, 1/2 teaspoon of pepper, 1 teaspoon of coriander seeds and 4 cloves.
�Triturate very well all the spices until powder texture. Then set aside.
�Remove the seeds and veins of 2 habanero peppers and put them in a blender.
�Also incorporate in the blender 1/2 teaspoon of oregano, 1 pinch of nutmeg, 1 pinch of salt, 4 garlic cloves, 1 tablespoon of lime juice, 1/4 cup of orange juice, 1/4 cup of white vinegar and all the spices that were previously ground.
�Blend well all the ingredients.
�A thick paste consistency must be obtained and in order to achieve it add in very small and equal portions the remaining orange juice and white vinegar.
�Each time the liquids are added blend to verify the consistency, until the desired thick texture is achieved.
