Pat steaks dry and season well. If you have time let set overnight uncovered in the fridge, this allows the seasoning to set in and the outside of the steak to firm up (place on a rack on a plate so air gets to all sides).

Smoke at 230 until meat is about 3 degrees below the desired temp (rare 125, med rare 135, med 145, med well 150, well 160). Place on board and tent for 10 minutes.
Sear both sides as follows depending upon what you have
* cast iron pan - heat till screaming hot add butter and steak for 45 secs or so a side
* sear burner - butter the steak and cook around a minute a side till nicely browned
* screaming grill - same as sear burner, may be slightly longer cook time
