Blanch zucchine in boiling water for 1 minute. Blanch Broccoli for 3-4 minutes. On cooke sheet toast pine nutes about 2-3 minutes under broiler until light brown. In large skillet heat olive oil, add garlic, tomatoes, zucchine, broccoli, snow peas, salt and pepper. Saute briefly about 2-3 minutes. Add fettucine to skillet along with butter, cream, parmesan, basil and pine nuts. Toss gently and serve. |
