1 can artichoke bottoms
2 oz chopped prosciutto
2 cloves garlic minced
4 tsp dijon mustard
1/4 cup bread crumbs
1 egg
1/2 tsp black pepper
2 Tbsp olive oil
2 oz parmesan

In a bowl mix the bread crumbs, egg, prosciutto, garlic, mustard, pepper and olive oil in a small bowl. Drain artichoke bottoms. Spoon 1-2 Tbsp of the mixture into each bottom. Place on baking sheet, sprinkle with parmesan and broil 5-6 inches from the heat for 1-2 minutes until cheese is melted and lightly brown.
