Saute the mushrooms in 3 Tbsp butter, stir in bread crumbs, 2 Tbsp lemon juice, parsley, 1/2 tsp salt and dash pepper. Blend inegg yolks. Brush fillet with remaining lemon juice, sprinke with salt/peper. Spoon in filling onto half of each fillet Fold over the other half and fasten with toothpicks. Place in buttered 2 qt shallow baking dish. dot with butter, pour in wine and cover with foil. Bake in preheated 350 oven for 20-30 minutes or until fish flakes easily. Garnish and serve with hollandaise sauce. |
