4 fillet of sole (1 1/2 lb)
1/4 lb fresh mushrooms chopped fine
1/4 cup butter
1 1/2 cup finely ground bread crumbs
3 Tbsp lemon juice
2 Tbsp minced parsley
2 egg yolks, lightly beaten
1/4 dry white wine
salt/pepper
Fresh parsley and lemon wedges for garnish
Hollandaise Sauce

Saute the mushrooms in 3 Tbsp butter, stir in bread crumbs, 2 Tbsp lemon juice, parsley, 1/2 tsp salt and dash pepper. Blend inegg yolks. Brush fillet with remaining lemon juice, sprinke with salt/peper. Spoon in filling onto half of each fillet Fold over the other half and fasten with toothpicks. Place in buttered 2 qt shallow baking dish. dot with butter, pour in wine and cover with foil. Bake in preheated 350 oven for 20-30 minutes or until fish flakes easily. Garnish and serve with hollandaise sauce.
