2 lbs. Skirt Steak
dry rub (recipe follows)
1/2 cup olive oil (extra virgin or regular depending on taste)
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon brown sugar

Rub skirts steaks down generously with rub, evenly rub the olive oil on steaks

Smoking:

In your smoker (preferably a wood one), prepare fire to reach a desired temperature of 250 degrees. Place room temperature steaks on cooking grates for three hours turning only once at the mid point. Serve as whole steaks or slice against the grain to make great tacos. This recipe is easy and tasty.
