1/2 c. butter
1/3 c. sugar
1 egg, separated
1 1/4 c. unsifted all-purpose flour
1/4 tsp. salt
1 tsp almond extract
1 c. flaked coconut
1/4 c. thick preserves, jam or jelly
1 egg separated

Mix flour and salt. In medium-size bowl with electric mixer or in a food processer beat and process butter and sugar until pale and fluffy. Add egg yolk, almond extract, and beat until smooth/blended. Graadually add flour mixture, beat and process until blended. Chill dough 2 hours till firm enough to shape. Roll into 1 inch balls. Dip in slightly beaten egg yolk and then roll lightly in coconut. Place 2 inches apart on greased baking sheet. With fingertips make a depression in the middle. Bake in preheated 300 oven 20-25 minutes, until firm to touch and coconut is lighly browned. Cool 30 seconds on sheet, remove to rack and cool completely. Fill depression with Jelly.
