3 containers brussel sprouts trimmed and halved
1/3 cup olive oil
2 Tbsp unsalted butter
8 garlic cloves
1/2 lb cremini cleaned and quartered
1/2 lb shitake cleaned, stems removed, sliced
salt/pepper
2 Tbsp minced thyme
1/2 cup chicken broth
12 sprigs parsley chopped

Butter 9x13x2 roasting pan, preheat oven to 350. Place sprouts in large bowl. In saute pan heat oil, butter over medium heat, add garlic saute 1 minute, add mushrooms saute 4 minutes. Season with salt and pepper, add to brussel sprouts. Toss with thyme and broth, reseason. Tranfer to prepared pan, cover with foil, roast for 40 minutes. Transfer to platter, garnish with parsley.
