3 Tbsp extra virgin olive oil
1 small onion, peeled and finaly chopped
3 cloves of garlic (or more), peeled and finely chopped
equal parts beef, veal and pork (generally a little over 1 lb). note if you can get veal, add 1/2 lb pork and 1/2 lb of sausage, or find a 1 lb mild beef/pork italian sausage)
For 3-4 lb of meat use (adjust for more)
1 1/4 cup fresh breadcrumbs
3/4 cup fresh romano cheese
12 sprigs italian parsley
3 extras large eggs
salt/pepper to taste

Place 1 Tbs of the oil in a skillet and saute the garlic/onion for 3 minutes till onion is translucent. Remove from heat and cool. In a large bowl mix together the meats, breadcrumbs, cheese. When cooled add the onion mixture, parsley, salt, pepper and eggs. Add salt/pepper to taste (generally touch of salt a good amount of pepper). The mixture should shape easily, if its too wet add more breadrumbs, too dry add some oil or egg. Shape the mixture into meatballs the size you want. Recipe will yield 30-120 depedning on the size. Set aside and use in Sunday Sauce.

If doing the crockpot, stick to 1lb of each meat.
