| 3 (7 ounce) packages cornbread mix 1 large sweet onion, diced 2 cups shredded colby-monterey jack cheese 2 large eggs, beaten 2 1⁄2 cups whole milk or 2 1/2 cups buttermilk 1⁄2 cup vegetable oil 3 teaspoons sugar 1 (15 ounce) can creamed corn 6 ounces chopped jalapenos | |

| Very moist... couldn't find 7oz pkgs of corn bread mix, so used two boxes of 10oz corn bread mix (the 7oz pkgs were corn muffin mix and didn't know if they would work) | |
