Preheat oven to 375
cook the bacon, set aside and crumble
Saute the chopped onion and mushrooms in the same skillet until mushrooms are tender and onion translucent. Set aside to cool.
In a large bowl, combine beef, pork, bread crumbs, milk, parmesan, crumbled bacon, shredded swiss, onion and mushrooms. Add eggs, Worcestershire, ketchup and spices. Mix well to combine, but dont overmix.
Shape into a loaf, place on a lined baking sheet and spread the 1/2 cup of ketchup evenly over it.
Bake for 60-70 minutes until internal temp is 160.
Rest for at least 10 minutes, slice and serve. |
