Recipe is for 5 lbs ground Pork Butt:
1 1/2 tbsp kosher salt
1 1/2 tsp ground black pepper
1/2 tsp onion powder
1 tsp dried thyme
1 1/2 tsp ground fennel seeds
1 1/2 tsp minced garlic
1/2 cup fresh parsley minced
1/8 cup grated Parmesan cheese
1 oz red table wine |

Course grind pork butt. Add all ingredients, mix well.
Stuff into 32-35 natural hog casings and make links or form into patties. |
