Shrimp
1-1/2 pounds raw extra large shrimp, shells removed, deveined & shrimp rinsed & drained well.
(You can use frozen cooked shrimp to save time. Just defrost frozen shrimp in a bowl of cold water, drain, & it’s ready to prepare & eat.)
4 cups water
1 large lemon, juiced
1 cube Knorr brand camarón flavored bouillon
1/4 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon dry dill
Cocktail Sauce
2 cups of ketchup
2 tablespoons prepared horseradish (You may add more or less depending on your spice factor preference.)
1 tablespoon Worcestershire sauce
1 large fresh lime, juiced (you can add more to your taste preference)
1/2 cup Clamato tomato cocktail
ground black pepper (to your taste preference)
Salt (to your taste preference)
For Serving
3 large jalapeño peppers, seeded & diced
1/3 cup red onion, diced
2 large tomatoes, seeded & diced
1/3 cup green onions, finely sliced
2 large avocados, diced
1 large cucumber, peeled, seeded & diced
1/2 cup fresh cilantro, rinsed, & finely chopped
Fill a large bowl with water & plenty of ice
In pot add water, juice of lemon, bouillon, garlic powder, onion powder, & dry dill.
Bring to boil, stirring often, then add the shrimp.
Cook shrimp for only 2 minutes.
Immediately remove shrimp & add to ice water to stop the cooking process.
Drain well.
(At this point cut cooked shrimp into large chunks or you can leave all of them whole. I like mine cut into chunks to serve more people.)
Store in covered bowl to allow to chill in refrigerator until ready to serve.
For the Cocktail Sauce
In a bowl add all ketchup, horseradish, & dash of Worcestershire sauce. Mix well.
Add the lime juice, Clamato, pepper & salt.
Stir & add more of any of the ingredients to your taste & sauce thickness preference.
Refrigerate sauce until ready to serve.
Serving
To Assemble Mexican Shrimp Cocktail
In large bowl add cooked chilled shrimp, all prepared vegetables, & chilled prepared cocktail sauce. Mix well until everything is well incorporated.
(You can add more of the cocktail sauce ingredients to your taste preference.)
Serve with fresh lime wedges, Tabasco or Valentina brand hot sauce, & saltine crackers. Enjoy.
