Sauce
10 guajillos
5 garlic cloves
Half of an onion
3 tomatoes

Onions Sliced fairly Thin,
Onion Diced
Queso Fresco or Panela
Tortillas

Boil the 4 sauce ingredients.
Blend it all up for a few min, if you find the consistency to be too rough, strain it, if its too thick add a bit of water (not too much) so it strains easier and faster either way you add water at the end.

Pan fry sliced onion with a little oil until they start turning brown , thats when the onion has released the best of its flavor, remove the onion to a cutting board. drop your sauce in the pan and fry it, add about 2 cups of water, salt to your taste And let it boil., consistency should be somewhat thick but not excessively thick.
For the cheese stuffing, just slice onions into squares and mix em up with whatever amount of queso fresco or panela that you want.
For the tortilla..
Sink it in the sauce OR drop a spoon of it in a pan and "pan fry" your tortilla with the sauce..
Once its ready fill it up with your stuffing, roll it up and so on.
Once ready just pour sauce on them and top them up with whatever else you like, recommended toppings are do lettuce, crema, avocado. Enjoy.
