Make the marinade to taste.
Trim and marinade the night before.
Start out with a hot fire, 375-400 degrees to get a good char and seal in them juices. Let internal get to about 165 then put back in aluminum disposal pans with lid(with the rest of your marinade) and let them finish cooking. Depends on size of brisket it takes 8-10 hours and is so good.
