Optional Meat (flavored with Salt/Pepper/Garlic Powder and onion Powder)
Olive Oil
1 onion diced fine
a few cloves of garlic minced or sliced thin
Canned Whole San Marzano tomatoes or jarred fresh San Marzano (you can use others, but San Marzano are the best.
Sugar

Add a little oil to your pan/pot.
If you’re going to do it as a meat sauce sauté the onions a little bit of garlic and meat first, add salt, pepper, garlic powder, onion powder to season the meat (to taste). If you're doing meatless, sauté the garlic and onion with a little salt and pepper.
Puree the whole tomatoes (blender, immersion blender or food processor).
Add the Puree to the sauté
Let simmer until reduced by about 1/2 inch and nicely thickened.
Add 1 Tsp sugar, stir well and taste. Repeat with the sugar until you have the flavor you want (you can't take it out so this will prevent over sugaring). Add a pinch of hot pepper flakes to taste (optional)
