1 1/2 quarts of strained spinach
1/4 pound of unsalted butter
3 eggs
1 cup chopped mushrooms
1 cup of chopped onions
4 cups of Au Gratin sauce ( Click Here)
3 1/2 tsp salt and pepper mix

1. Melt butter in skillet over medium heat. Add onions and mushrooms, saute for 10 minutes, stirring constantly.

2. Add eggs and spinach. Stir will, making sure yolks are broken.

3. Add Au Gratin sauce and salt and pepper. Mix well. Continue to cook for about 10 minutes or until hot.
