shoulder bacon (about 1 lb)
rub of choice (mustard based is best). you can also put a layer of mustard on it then add a rub)
canned or soaked black eyed peas 1-2 pans
Salt
Pepper
Garlic
TBSP Yellow mustard

Rub the shoulder bacon (mustard if you want)
Smoke the shoulder bacon
put black eyed peas in a cast Iron skillet, add SPG to taste and the yellow mustard, stir to incorporate
Add pan to smoker
When bacon is nicely cooked (it wont cook like regular bacon) remove and rough chop
add the bacon to the black eyed peas, stir and smoke another 30 minutes
