2 TBSP Olive Oil
1 Onion Sliced
lb bacon Sliced
2 TBSP your favorite bbq rub
1 can black beans drained and rinsed
1 can white cannellini beans drained and rinsed
1 can kidney beans drained and rinsed
1 can mixed beans drained and rinsed
1 can chopped tomatoes
¼ cup water
½ cup Get Lit Chipotle BBQ Sauce, or make your own, puree a chipotle into BBQ Sauce
1 teaspoon Chipotle and Lime Salt, or any salt with a squeeze of lime and a pinch of chilli /chipotle powder
Sour Cream/Crema, chives, parsley or cilantro

Heat cast irons skillet on grill/smoker, add the oil at medium heat. Add the onion and saute a few minutes stirring regularly. Add the bacon and BBQ rub, stir frequently until bacon is cooked. Add the beans and pour tomatoes, water, chipotle bbq sauce and salt. Stir Gently.
The skillet will be pretty full, shut the lid and let bake for 20 minutes at about 400 degrees.
Stir, taste and adjust seasoning. Top with Sour Cream Dollops and garnish. Serve and Enjoy.
