chicken quarters/thighs/legs
avocado oil
good butter (Kerry Gold or fresh churn)
Salt/seasoning of your choice/herbs

Preheat oven to 350
Lightly salt the skin side of the chicken, let set 5-10 minutes and pat dry
Season with whatever else you are using
In a cast iron or oven safe pan, heated to medium high, brown the skin of the chicken as thoroughly as you can (hold with tongs if needed)
Remove the chicken
Lower heat to low and add avocado oil and butter to pan (depending on how much chicken you have you will add more, but figure a spash of oil (TBSP) and hunk of butter (TBSP) per chicken quarter
Once melted, stir to loosen an bits on the pan and add back the chicken skin side up
Place the pan in the oven for roughly one our (go by temp, not time 165 is done, start checking around 45 minutes.
When done, move pan back to the stove, remove the chicken and make gravy with the drippings.
Serve with whatever you want.
