Barbecue


3 thick smoked bacon slices, finely diced
1/2 yellow onion, finely diced
Salt to taste + 1 tsp
1/2 lb ground beef
1/2 lb ground pork
1/2 cup loosely packed bread crumbs
2 1/2 TBSP chopped flat leaf parsley
1/2 TBSP chopped fresh thyme
Fresh ground black pepper to taste
BBQ sauce or Marinara for serving

Preheat your grill to medium high

In a small fry pan over medium high heat cook the bacon till just crispy (about 8 minutes). Remove the bacon with a slotted spoon to a paper towel. Pour off all but 1 TBSP of the oil from the pan and lower the heat to medium. Add onion, a pinch of salt and cook stirring occasionally until onion is soft and started to brown, about 6 minutes. Let cool to room temp.

In a large bowl, combine all the ingredients till they are just combined (hands work best, but you can use a spoon).

Spray the inside of both halves of the meatball basket with non stick cooking spray. Form about 3 TBSP of the mixture into a meatball and place in the bottom well. Repeat until done. Close and clasp the lid and place the basket on the grill . Close cover and cook 5-8 minutes, flip the basket and cook another 5-8 minutes.

Remove from grill, open the basket and use tongs to remove the meatballs. Serve with a side of warm BBQ sauce, or marinara
