Appetizers


For the Crab Dip Base:
1/2 cup diced onion
1/3 cup diced celery
3 tablespoons butter
16 ounces cream cheese
4 ounces heavy cream
1 and 1/2 teaspoons Old Bay seasoning
1 and 1/2 teaspoons Ranch powder/dressing mix
1 teaspoon Worcestershire sauce
For the Crab Tots:
2 pounds tater tots (any brand)
2 cups diced tomato
1/2 cup chopped scallions
2 cups shredded Cheddar/Monterey Jack cheese
1 pound lump crab meat

For the Crab Dip Base:
Sweat onion and celery in butter until translucent.
Add heavy cream and bring to boil.
Add Old Bay, Ranch seasoning and Worcestershire.
Remove from heat and add cream cheese a few pieces at a time, using a hand mixer.

For the Crab Tots:
Preheat broiler.
Follow package instructions for tater tot preparation.
Place hot tots in large casserole dish.
Drizzle crab dip base over tots and sprinkle with cheese.
Add diced tomato and crab meat.
Place under broiler and remove once cheese has melted.
Sprinkle scallions and serve.
