2 1/2 Pound Picanha
As Needed kosher salt/Brazilian Steak Salt
Pepper
Minced Garlic or Sofrito seasoning (preferred Click Here)
Lime (optional)

Cut the picanha into steaks about 1-inch thick. Allow the steaks to come to room temperature. Fold them in half to form a "C" shape with the fat cap on the outer edge.

Season generously with coarse salt, pepper, garlic, squeeze of lime if using and leave at room temperature while the grill heats up, and then thread the steaks onto a skewer or rotisserie (depending on how you are going to cook) one on top of the other.

When ready to cook, set the temperature to High and preheat for 15 minutes.
Place the skewered steaks directly on the grill grate and cook for 5-7 minutes per side or until desired internal temperature is reached, 130℉ for medium-rare.
Or if using a rotisserie place on rotisserie and cook about 20 minutes (check after 10 and every 5)

Let rest 5 minutes before slicing. Enjoy! *Cook times will vary depending on set and ambient temperatures.
