1-1 1/2 lb flank steak
1 tsp sea salt
1 tsp pepper, freshly cracked
1/2 cup olive oil
1 tsp italian herb mix
1/4 cup diced garlic
2 oz lemon juice
1 tbsp garlic powder
zest of 1 lemon
1/4 tsp ground ancho chili pepper
Brandy
more pepper/ancho/granulated garlic for seasoning

Prep the steak, remove any silver skin you see.

Combine the marinade ingredients in a bag or bowl.Se

Add the flank steak and allow to marinade for at least 20 minutes up to 2 hours (dont go over that due to the lemon juice), flip/rub to ensure meat is evenly seasoned every 10-15 minutes. Remove the steak from the marinade and separate the garlic from the marinade. Season the steak on both sides with Granulated garlic and a little more ancho chili. On a Hot grill/pan cook the steak 4-5 minutes (for rare, if you want more well done add a minute for medium, 2 for well) flip and go the same amount of time. Steak should have sear marks on both sides and use a thermometer to check doneness. Set meat aside and cover 5-10 minutes to let the juices be absorbed back into the meat. While cooking in a saucepan melt some butter and add the garlic, let it simmer softening the garlic, add a good amount of ground pepper (taste and adjust salt/pepper) at the end add 1-2 TBSP brandy and let cook 1 -2 minutes more. Slice the steak in thin slices across the grain, serve and top with the garlic/brandy sauce
