3 large egg yolks
Juice of 1/2 lemon (start with 2/3 of the juices and add to taste at the end)
2 sticks (1 cup) salted butter, melted and hot
1 tsp adobo sauce (or more)
Kosher Salt

Add egg yolks to blender with lemon juice and blend for several seconds. With the blender running drizzle in the melted butter. Turn the blender off, and add the adobo and some salt. Blend again and taste, adjusting lemon juice, adobo and salt to taste. Pour into a pot and keep warm until using.
