8-10 tomatillos
1 white onion (big or 2 small) (quartered)
8 cloves Garlic
1 Jalapeno (halved or quartered (depends on size))
Bunch of Cilantro
salt/pepper to taste and additional clove or two of raw garlic if you like
Optional 1-2 tsp sugar or agave (to round the flavor)
Place onion, garlic, jalapeno, tomatillo's on a tray (smoking) or baking sheet (oven)
If smoking I like low and slow so go 200 pellet or 230 electric, For oven go with 350.
Place them in and cook, oven will be faster for smoker it should go 1 1/2-2 1/2 hours, oven more like 30-45 minutes.
When tomatillos are soft (varies based on size and method), remove and cool. Place the cooked ingredients in a food processor and puree till smooth. Pulse in the cilantro and taste. Add salt/pepper and additional raw garlic cloves if you like. Pulse till smooth, taste and adjust as needed. To round out the acidity add the sugar/agave in quarter teaspoon amounts, incorporate and taste. Repeat until its as you like it.
