Boneless/Skinless Chicken Thighs

For better skin let the thighs set uncovered in the fridge for 24 hours (dry the skin till leathery)

dry the chicken, lightly coat with oil and thoroughly cover with rub.

Smoke over apple pecan 2-4 hours (till done, will depend on size of chicken). If you are in a hurry you can finish on the grill. If you dont have a smoker, cook on the grill using indirect heat (part of grill that's off). Cook till temp hits 165.
