2 shallots/1/2 small onion/scallions
4 cloves garlic
2-3 TBSP Coconut oil (start with 2 add more if needed)
2-3 TBSP red curry paste (start with 2 add more if needed
1 tsp chili/garlic paste
1 tsp Sriracha
splash rice wine vinegar
splash coconut milk/1/2 and 1/2
1 LB shrimp
1/4 cup Xaoxing/white wine
splash soy sauce.

Finely chop the onion/garlic
Heat the coconut oil in a pan, add the onion/garlic and cook till soft.
Add the curry, Chili/Garlic paste, Sriracha
cook till flavors are well combined (2-3 minutes)
add the vinegar and wine, let cook till good consistency. Add splash of soy, and taste and adjust the seasoning
add the shrimp and quickly cook till done, add in the splash or of milk/half and half, cook 1 minute and serve
