Smoker


2 egg whites (2 ounces of Egg Beaters Original)
1 cup sugar
1 teaspoon cinnamon
1 teapoon ground clove powder
1 teaspoon ginger powder
1 teaspoon salt
1 pound raw pecan halves

Mix together the sugar, cinnamon, cloves, ginger, and salt in a small bowl.

Add 1 teaspoon of cold water to the egg white in a large bowl. Beat with a whisk until it forms soft peaks.

Stir in the pecans, sugar and spice and everything nice. Coat evenly.

Place on an oiled pan (I like to take a smoker basket and line with foil and spray with non stick spray)

I like to make these extra smokey for that

Set smoker to smoke only or use a smoker tube (no heat, just smoke)

Use a sweet fruit wood (apple/cherry) and smoke for 2 hours

After that, Set the smoker to 230 and smoke for another hour

They should be most dry/tacky at this point, if they arent let them go another 15.

Remove let cool, after about two hours they should be solid and you can remove and break up. Note if they are still sticky ant this point, place in a 230 over for 15-30 to finish drying and repeat, let cool and break up
