1 large cauliflower
1/2 cup extra virgin Olive Oil
1/4-1/2 cup blackening spice (recipe below), reserve 1 TBSP for sauce
1 Tbsp chopped rosemary or other herb
1/2 cup ranch dressing

Blackening Seasoning (makes about 1/2 cup)
2 tablespoons ground paprika
1 tablespoon ground cayenne pepper
1 teaspoon onion powder
2 teaspoon salt
1/2 teaspoon ground white pepper
1/2 teaspoon ground black pepper
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1/4 teaspoon dried thyme
1/4 teaspoon dried basil
1/4 teaspoon dried oregano

Preheat oven to 375
Choices slice the cauliflower into 3/4 inch steaks or florets
If using slices
* drizzle well with oil and liberally sprinkle with blackening seasoning
* repeat on the other side
If using florets
* mix blackening season with oil (use as much as needed) to form a paste add florets and cover well

Place parchment paper on a cookie sheet and place cauliflower on it
Bake 45-55 minutes till tender, turning half way through

While cooking mix ranch dressing with 1 TBSP of the blackening seasoning.

If doing slices, drizzle the ranch over the slices, if doing florets, use the ranch as a dipping sauce.
