Preheat oven to 350.
In a fry pan add the oil, cook the sausage till done and set aside.
Add the oil, onion, spinach, salt and pepper and cook till wilted, set aside.
In a bowl add the potatoes, garlic, salt, pepper and hot sauce, toss. Add the cheeses and mix well. Add the spinach and sausage (reserve 1/2 cup of the sausage for the topping) and beaten eggs. Gently fold the mixture together.
Place mixture in a 9x13 baking dish and top with remaining Swiss and reserved sausage. Bake 45-50 minutes.
