Breakfast


�3 pounds potatoes scrubbed, dried and cut into 1 inch cubes with the skin on (I prefer gold potatoes). You can use a smaller dice but cooking time will be reduced.
�2 tablespoons olive oil
�2 tablespoons salt
�1 tablespoon pepper

Peppers onions and whatever else you like

1. Preheat your oven to 425 degrees with your heaviest duty baking sheet inside as at preheats to get the baking sheet nice and hot. Preheat the baking sheet for at least 10 minutes.
2. Toss the potatoes in olive oil, salt and pepper. Remove the hot baking sheet from the oven, line with parchment paper, and spread the potatoes in an even layer. You should hear them sizzling right away.
2a. While In the oven prep whatever you are combining the potatoes with.
3. Roast your potatoes in the top third of your oven for 45 minutes for 1 inch dice about 20 for 1/2 inch dices. Tossing halfway thru.
3a. cook whatever you are mixing the potatoes with (onions/peppers/corned beef/...)
4. When done you can serve, or add immediately to the cooked sides and combine.
