1. In a large bowl, stir with a fork the ricotta cheese
2. Add the eggs, Parmesan, breadcrumbs, chopped Italian
parsley, salt, pepper and the grated nutmeg.
3. Gently cut the meats in small dices, separately.
4. Divide your ricotta mixture in 3 equals parts and add to them
different type of meat in order to have three different kinds
croquettes.
5. Mix together and, with slightly humid hands, make small
meatballs.
6. Place on a baking sheet and cook for 15 minutes at 350�C or shallow fry for about 4 minutes |
