left over chicken fajita mixture of onions, chicken/beef, peppers, and tomatoes.
(1) 8 oz. can of tomato sauce (or double the diced below)
(1) small can of diced tomatoes (8 oz) (we prefer fire toasted diced)
cilantro seasoning
garlic salt seasoning
packet of fajita seasoning
salt
pepper
can of chicken broth
(depending on the amount of leftovers, you may need to double the broth)

Step 1

Get a large sauce pan out and pour in a can of chicken broth. Heat it to where it is almost boiling. This will be the base for your chicken fajita soup.

Step 2

Add some diced tomatoes and let them cook into the broth. Then eyeball some cilantro seasoning, garlic salt seasoning, salt, and pepper. Let it simmer some. Do not add the fajita mixture just yet...

Step 3

Heat up the leftover chicken fajita in the microwave if needed. Now add it to the saucepan and let it cook into the broth mixture...

Step 4

Pour in your can of tomato sauce or additional diced, and then add the chicken fajita packet mix. If you don't want it too spicy, do not add the whole packet. Half of the packet will do also. Especially if you are only preparing a small portion and not a dinner.

Step 5

Let all of the ingredients simmer together. Add more seasoning to taste if desired. Pour into bowls or cups. The chicken fajita soup makes a great appetizer or even a small dinner side. It is also great with some tortilla chips too! Add a little shredded cheese for some extra oomph!
