Slab of pork ribs (try to get lots of meat on them)
Rub (Wild Willies or your favorite)
Mop of your choice.

Remove the silver skin if it is there. Cut to sizes you can handle in the smokere. Rub the ribs with the rub covering thoroughly. If you can do this the night before and place in the fridge. Bring to room temperature and smoke. Apply mop every hour or two. Smoke until internal temperate is at least 170 and meat pulls away from the bone. You can finish in the oven.
