�1 cup of chickpea flour for every 1/2 cup of yogurt
� cauliflower
� onions
� potatos
� broccoli
� tomato
� eggplant
� tofu
� cilantro
� spinach
� chives
� scallions
� ground corriander
� masala
� salt
� fenugreek (methi)
� cumin (jeera)
� turmeric
� red chili powder

1.) The total amount of flour and yogurt will need to be adjusted depending on the consistency. You want a thick, even smooth batter.
2.) Cut all the veggies into bite-size pieces and add spices.

3.) Add the flour to the veggies and slowly add the yogurt and mix well until everything is evenly coated.

4. ) Fry them in small batches on medium/high heat until golden brown - takes about 3-5 minutes.

5.) Place on a paper towel to drain excess oil. Enjoy!!

* They included a list of possible vegetables you can add but it is totally up to you and your taste. Onions and potatoes are the most common abd you can add any veggie you like. All of the green veggies are optional. The spices that you add to this dish are also variable. The most common are red chili powder, salt, masala, and ground coriander.
